Charcoal Grills
By far the most famous charcoal grill is the Weber. It is constructed to cook food evenly over a live charcoal fire. Inside its domed lid is a rack for the fuel (charcoal) and another rack above for the food. Grates are made of nickel or chrome-plated aluminum, although some higher-quality grates are made of cast iron, stainless steel or porcelain-coated aluminum. The better the grate, of course, the longer it will last. But, the heavier gauge also maintains and distributes heat better.
Gas Grills
Better quality gas grills usually have two or more separate burners, which allows the backyard grill guy to control the heat better. Grills with only one burner are harder to control, so food may have hot and cold spots. Juices from the food drip onto the heat source, then reach a flash point and burn off. This system prevents flare-ups, but create that familiar smoky flavor.
